...This is one of my breakfast favorites, a little recipe called "Ox eyes," or alternately "Eggs in hell," whichever floats your boat.
This is intended to be a spicy recipe; I'll say that flat-out. Most of the stuff I post IS, but you CAN make it without the "hot," and it'll still be ok. This one, however, would be... kinda pointless.
Right.
That said, if you didn't get scared off, let's get started, shall we?
You will need:
Vegetable oil or bacon grease; about 2 tablespoons. (I would make this after the bacon, then just use the fat that was in the pan, but that's me.)
2 good jalapenos, stemmed, seeded, and finely minced / food processored.
1/2 chopped onion.
1/2 green bell pepper, seeded and chopped.
Tomatoes! If you're using the food processor, just puree 'em, you'll need like 3 good sized ones.
salt, pepper, minced cilantro, and minced garlic to taste.
Eggs, obviously, and flour tortillas.
Saute the peppers, onion, and chiles in the bacon grease until they're well wilted. This takes maybe 3 minutes.
Add the tomatoes, bring it to a boil.
You're shooting for a fairly runny consistency in the sauce; if it's too thick, add some water.
Stir in the salt, pepper, garlic, and cilantro.
Gently break the eggs into the pan, cover, and cook until the whites are done and the yolks are cooked the way you like 'em.
Spoon them out onto the tortillas, and use the sauce to top 'em.
Yum.
