Dinner Time Again

Getting myself in the mood for an opinion blog after so long without, frankly, writing anything required a bit of fortification.


Accordingly, here's what I made for dinner. (This is two recipes, separated, although I admit I made them more or less simultaneously.)

You will need:

4 oz. cooked crab meat (real, thank you.)
8 oz. crumbled feta cheese
4 oz. cubed cream cheese
4 tbsp. butter
1/2 tsp. paprika
1/2 tsp. onion powder
1/2 tsp garlic powder
1/4 tsp. black pepper
1 package medium mushrooms

Pre-heat your oven to 375.

Combine the butter and cheeses in a bowl. Microwave for 1 minute, then stir. Repeat until the cheese are smoothly melted and stir in the crab and spices. Microwave for 1 more minute, stir.

Rinse the mushrooms, then remove the stems. Lightly saute the mushroom caps with a little olive oil until they start to soften. Place the mushroom caps, hollow side up, in a small baking dish; fill with the crab and cheese mixture. Place dish in the oven and bake for 10 minutes, or until the mushrooms are browning nicely.

Remove, and serve. The remaining crab and cheese mixture can be served on crackers if you MUST.

Second...

Leave the oven on 375.

You will need:

4 medium-sized chicken breast fillets.
1 stick butter
1/4 cup Southern Comfort
1/4 cup Captain Morgan's Spiced Rum
1/3 cup sweetened lime juice
1/2 cup brown sugar
1/2 cup heavy cream

Melt the butter in a medium sauce pan. Once it's melted, stir in the Southern Comfort, Captain Morgan's, and lime juice slowly, ensuring that it is mixing evenly. Continue to stir until the sauce starts to bubble, stir in the brown sugar, and mix until it is fully dissolved, then stir in the heavy cream. Simmer for 3 minutes, then remove from heat.

Place the chicken in a small casserole dish and pour the sauce over it. Bake at 375 for 35 minutes or until the chicken is fully cooked, turning the chicken over every 10 minutes.

This can be served with the remaining sauce poured over it.

For the record, I loved both dishes. Kelli was somewhat disappointed, as she doesn't like crab, mushrooms, or "anything with liquor in it."
