Another Day, Another Tasty Dinner... |
This time, half mine and half the doing of my lovely fellow chef.
Since we each made a dish, and she wanted to make sure she got credit for hers - which for the record was really tasty - I will do this in two parts, hers first and then mine.
For her chicken - y'all can suggest a suitably yummy name in comments - you will need:
boneless skinless chicken breasts, however many you want to make.
seasoned salt
onion powder
Fortner's #37 (Also, for the record, this stuff is awesome.)
flour
olive oil
mozzarella cheese (shredded or otherwise; she used a couple of those snack-style string cheeses.)
Lightly sprinkle the chicken all over with the seasoned salt, onion powder, and Fortner's #37, then lightly coat each piece in a mix of flour and seasoned salt to seal the flavors in.
Fry the chicken in the olive oil in a skillet, and when it's nearly done, melt the mozzarella on top.
That's it! Simple, but super-tasty.
Faced with such obvious excellence, I felt it necessary to step up to the plate with something that was a worthy accompaniment, so: 5-Cheese Soup!
In a medium saucepan, combine:
1 1/2 cups diced potatoes (if you're doing this in a hurry, you can use canned potatoes, but fresh tastes better.)
2 cups chicken broth
1/2 cup heavy cream
3 tbsp. cream cheese
1/2 cup diced red onion
1/2 tsp. each basil leaves, marjoram, white pepper, and minced garlic
4 oz. cubed Velveeta
2 tbsp. parmesan cheese
1 oz. mozzarella cheese (I also used a snack-style string cheese)
1 cup corn
annnnnnnnnnd... 1 tsp. powdered white cheddar cheese. (They say this is for popcorn... Ha! It's a soup ingredient if I say so, and I do.)
Heat until boiling, stirring constantly, then reduce heat to a simmer until the onions have softened nicely and the potatoes are done.
These two combined to make us a nice, filling but fairly light dinner, without a lot of fuss; all told, it took us about 25 minutes for each dish. (We didn't start at quite the same time, so they came out a bit unsynchronized, but if you have the kitchen space to get them going at the same time, they should finish right together.)

Here in this country, we have - at its root - a consequentialist society. The decisions and choices you and I make on a day-to-day basis have consequences to our lives, and the repercussions of those decisions upon others frequently have consequences for us as well.

Since the notion of a sales tax (and whatever people may think, the so-called "FairTax" is a sales tax) - on top, of course, of all the other taxes - has been broached for the United States, I have noticed a very disturbing trend.

So... Economic Recession, Indeed |
Thus proving my notion that people who look for work usually find it, after only a couple of weeks in St. Paul, I have a job interview next week.
And, I got an invitation last night from a friend of a friend to come work as a driver at his cab company (I have done this before, so I'm for it,) if that falls through.
Very little in life is guaranteed, so any good wishes would be appreciated, but things are definitely looking up!
